Goin' bananas.

Whenever Ty does the grocery shopping with me we end up with a few interesting things in our cart. This time it was plantains. I've never eaten them before and he suggested we give it a go for family night treat. He tried them in Mexico with salsa and liked them. I decided they'd be better with cinnamon and whip cream (my kids are always asking if I "made up" the recipe and this one I didn't). The verdict? A plantain is more like a potato than a banana and if we ever eat them again it will be with salsa. They were ok, but only 2 of us really liked them this way.

Toni,

There are so many way to do these plantains. In colombia we slice them the long way and fried them. The other way you can do them is stuff them with cheese and bake them. Slice it boat style and stuff it with your favorite cheese. Wrap it with foil and back for 30 mins. Let me know if you want more plantain recipes.
