Good Recipe

Blueberry Pie + Vanilla Ice Cream = Happy Baby!
My little guy loved this pie (as did the rest of us) and it was so so so easy! Just a plain pie shell (in this case I used Pioneer Woman's) and 2 cartons of blueberries. I had to use this tart pan I got for $1 and it made it very pretty. I should have put a top on it, but to be honest I ran out of time. Anyway, I just rolled the blueberries around in a little sugar and flour and nutmeg (easy on the nutmeg) and then put a few dollups of butter on top and baked until it was nice and golden around the edges. It was perfect - nearly fresh, yummy goodness. Next time I think I'll use 1/2 the sugar and bump up the butter a little (maybe 1/2 a cube?).

Mmmmm-mmm. That looks to die for. I know I'm stupid, but in my mind making pie seems like such an ordeal. Maybe that comes from Holidays where Mom slaved over the stove for hours (and days). But is it really that easy? (I guess number one thing for me to get is a rolling pin. I know; pathetic.)

Yummy! I love the pan! Heath and the kids picked a huge bowl of blackberries last night, so now I get to come up with something exciting to use them on.
